Chicken Rolls
Italian chicken rolls, or involtini di pollo, are a classic dish that showcases the elegance of Italian cooking. Thinly pounded chicken breasts are rolled with prosciutto, cheese, and herbs, then pan-seared and finished in a rich sauce.
The key to perfect rolls is proper pounding - the chicken should be uniformly thin to ensure even cooking. Stuffing variations include spinach and ricotta, sun-dried tomatoes and mozzarella, or the classic prosciutto and fontina combination.
